We have been in a bit of a baking kick lately and felt like we scored with these delicious goodies. They are really easy to make and filled with good for you ingredients. These muffins are moist and not too sweet. We ate them plain but think they would pair nicely with a smudge of peanut butter, or even just butter right after they come out of the oven. we are sure you will love them!
1/3 melted coconut oil
1/2 cup of honey
1/4 cup almond milk
1 tsp baking soda
1 1/2 tsp of vanilla extract
1/2 tsp salt
1 tsp of cinnamon
1 3/4 cups of flour
1/2 cups oats
1/2 cup chocolate chips
coconut sugar for sprinkling on the top
- Preheat oven to 325 degrees, and prep muffin tins, either spray or line the tray.
- Mix the melted coconut oil and honey until throughly mixed and add eggs. Beat in mashed bananas, vanilla and almond milk.
- Mix together dry ingredients (baking soda, salt, cinnamon, flour, oats), then slowly add to the banana mixture. Fold in chocolate chips (optional) until completely combined
- Pour the batter in the muffin tray, and sprinkle coconut sugar on top for an added bit of sweetness. Bake for 22 – 25 minutes, or until an inserted toothpick comes out clean.
